A passion for pasta - Sausage and capsicum pasta sauce
Ingredients
• ½ cup dried cranberries
• ½ cup sultanas
• 1 cup rolled oats
• 1 cup desiccated coconut
• 1 cup loosely packed brown sugar
• 1 cup self-raising flour
• 125g butter, melted
• 2 eggs, lightly beaten
Instructions
1. Preheat the oven to 180°C. Line 2 baking trays with baking paper.
2. Place cranberries, sultanas, oats, coconut,
sugar and flour in a large bowl. Stir to
combine. Make a well in the centre of
mixture.
3. Add butter and eggs to flour mixture. Stir
to combine.
4. Drop teaspoons of mixture onto trays,
leaving a little room for spreading (you may
need to do two batches).
5. Bake for 12 to 15 minutes or until golden.
Cool on trays for 5 minutes. Transfer to a wire
rack to cool before serving.
